Prekmurje Bujta Repa — Pickled Turnip and Millet Mush with Pork


  1. 1 kg pickled turnip,
  2. 1 kg pork,
  3. 250 g millet mush,
  4. 1 medium onion,
  5. 2 large cloves of garlic,
  6. 40 g flour,
  7. sunflower oil or fat,
  8. bay leaves,
  9. whole black pepper,
  10. salt,
  11. ground red pepper.


Boil turnips and meat on medium heat, add bay leaf, whole black pepper and salt to taste. When the turnip becomes soft, add ready millet mush.

When the dish is ready, make roux[*] from flour and sunflower oil, add sliced ​​onions and garlic. Fry the ingredients to a bright golden colour, add a little ground red pepper. Add roux to turnip and boil well stirring.


[*] Roux is a heat-treated mixture of flour and fat, usually melted butter. Usually used as a thickener in sauces. It is one of the main ingredients for classic French sauces, including béchamel. To cook roux, butter is usually used. Lard or vegetable oils are used less often.
