Cuisine of Slovenia’s Regions: Veal Round with Rice and Vegetables


  1. 1.5 kg veal,
  2. 50 mL sour cream,
  3. 300 mL beef broth,
  4. salt,
  5. pepper,
  6. cumin,
  7. vegetable oil,
  8. 0.5 kg rice,
  9. 1 carrot,
  10. a small plate of green peas,
  11. water.


Wash the meat, salt, pepper and rub with ground cumin. Bake the meat in the oven for about 1.5 hours at 190 ºС. When baking, pour the meat with beef broth. At the very end, add sour cream and rice with vegetables and simmer another 5 minutes.

Cook rice in boiling water with carrots, then drain and rinse well. Cut the carrots into slices, add green peas and gratinate all together in the oven for 5 minutes.
