Cuisine of Slovenia’s Regions: Spicy Pork Rack

Cooking time: 30 minutes.

Ingredients (for 4 portions)

  1. 1 big or 2 small racks without bones,
  2. 5 leaves of sage,
  3. 2 sprigs of rosemary,
  4. 5 cloves of garlic,
  5. 1 tbsp butter,
  6. olive oil,
  7. salt, pepper,
  8. 50 mL white wine,
  9. 100 mL broth.


Melt the butter, add some olive oil and the rack. Fry the rack on both sides until golden brown. Salt and pepper, fry a little more and pour over with wine. Reduce the heat, turn the rack, and add a little more salt and pepper. Add the finely chopped mixture of sage, garlic and rosemary, gently shake the frying pan and leave it covered to boil. Then add the broth and leave covered over moderate heat for 10–15 minutes. When the sauce thickens, add a slice of butter, salt and pepper if necessary.
