Cuisine of Slovenia’s Regions: The Sirek(s)
Ingredients for 4 portions:
- 400 g cottage cheese,
- 0.5 teaspoon ground cumin,
- 2 pinches salt,
- 0.5 teaspoon red ground sweet pepper,
- 0.5 teaspoon red ground spicy pepper.
Put cottage cheese into a deep bowl and mash it with fork. Sprinkle the cottage cheese with cumin and salt, as well as with spicy and sweet pepper (to taste). Carefully beat the cottage cheese mass manually and mould a “sirek” in the shape of a cone, continue moulding to use up the mass. They should be about 6 centimetres high.
Put the ready “sirek”s in a fruit dryer. Dry them for about 3 hours. They can also be dried in the sun or near a bread oven.
“Sirek”s are an excellent salty snack during the reception of guests, which can be perfectly combined with extraordinary white wines.
To give “sirek”s a juicier taste, soak them in warm milk.
