Cuisine of Slovenia’s Regions: Green Cabbage in Sauce with Mashed Potato


  1. 300 g chopped fresh cabbage,
  2. 150 g soy flakes,
  3. bay leaves,
  4. 4 tsp cumin,
  5. 3–4 tbsp agave syrup,
  6. 1 tbsp olive oil,
  7. 4 tsp ground black pepper,
  8. a pinch of marjoram,
  9. a pinch of thyme,
  10. 10 cherry tomatoes,
  11. 4–5 medium potatoes,
  12. 2 tsp margarine (vegan),
  13. 3 cloves garlic,
  14. salt and bell pepper.


Put the diced potatoes in salted water to boil. Add a tablespoon of olive oil and agave syrup to the pan. Cook for a couple of minutes.

Add all the spices and cook for 2 minutes. Add the pre-soaked soy flakes and cabbage. Cook for 5 minutes.

Add cherry tomatoes, cook for 5 minutes, then add water. Boil for about 20–25 minutes more.

Take out the cooked potatoes, add margarine and chopped garlic. Mash the potatoes.
