Cuisine of Slovenia’s Regions: Country Style Chicken with Peeled Tomatoes and Mushrooms
Cooking time – 60 minutes.
Ingredients (for 4 portions)
- 1 carrot,
- 1 celery stalk,
- 8 onions marinated in vinegar,
- 4 chicken legs,
- 2 chicken quarters,
- 2 chicken breasts on the bone,
- 10 mL wine,
- water (if required),
- 240 g peeled tomatoes,
- 30 g dried porcini mushrooms,
- Himalayan salt,
- 5 mL sour cream.
Stew finely chopped carrots, chopped celery stalk and pre-washed chopped onions with butter for 10 minutes. Add wine and chicken quarters and legs (without skin) divided into pieces and dredged in flour. Stew until the wine evaporates. Add peeled and diced tomatoes and water. Salt, pepper and simmer for about half an hour in a tightly closed container over low heat. Then add the well-drained mushrooms, previously soaked in warm water, and simmer for about 15 minutes.
At the end, add sour cream and cook for a few more minutes. Serve with ravioli and cheese.
