Cuisine of Slovenia’s Regions: Beef Ribs in Coffee Sauce

Soft and juicy ribs in coffee sauce. Cooking time: 150 minutes.

Ingredients (for 2 persons)

  1. 600 g beef ribs,
  2. 10 mL red wine,
  3. 5 mL Brazilian Robusta coffee,
  4. salt,
  5. pepper,
  6. rosemary,
  7. sweet ground paprika,
  8. barbecue sauce,
  9. Tabasco sauce,
  10. onion,
  11. 1 garlic clove,
  12. potatoes.


Clean the ribs and remove excess fat. Rub them well with salt and pepper, bake from both sides and remove from the pan. Then fry the garlic and onion in the same pan, pour with wine and bring to a boil. Add Tabasco sauce, coffee and spices, mix, and put the ribs. Pour water to cover the ribs to the top. Reduce heat and cook for about 2.5 hours, until the ribs are cooked well.

Simultaneously boil and mash potatoes. When the ribs are cooked, remove them and drain the sauce. Add 1 tablespoon of barbecue sauce to the pan and bring to a boil to thicken the sauce.

Season the dish with barbecue sauce and serve.
